Tandoori Masala is a mixture of spices found in traditional north Indian and Pakistani cooking. It is used in marinades for chicken and meat before baking them in a high-heat clay oven, called a tandoor. You may substitute a very hot gas or electric oven for a tandoor in your own kitchen.
