India Tree Dried Garbanzo Beans combine with fresh herbs, parmesan cheese, India Tree Tellicherry Pepper, and freshly squeezed lemon juice for this chilled salad with a citrus tang.

1 pound Dried Garbanzo Beans

1/4 cup fresh Basil

1/4 cup fresh Italian Parsley

1/4 cup fresh Lemon Juice

1 1/2 tablespoons Extra Virgin Olive Oil

2 Garlic Cloves, minced

2/3 cup freshly grated Parmesan Cheese

Pinch freshly ground Tellicherry Pepper

Pinch coarse India Tree Kosher Sea Salt

Instructions
- Rinse and soak dried beans for at least 8 hours or overnight. Drain and set aside.
- Add the beans to a large pot and fill with water (approximately 12 cups).
- Bring to a boil. Once boiling, reduce heat and cook beans for 45 minutes.
- Rinse thoroughly in a colander under cold water then refrigerate for an additional 30 minutes.
- Combine the chilled garbanzo beans, fresh basil, chopped parsley, lemon, olive oil, and garlic in a medium bowl.
- Add grated parmesan and toss gently to combine. Season to taste with the sea salt and black pepper.
