India Tree Dried Garbanzo Beans combine with fresh herbs, parmesan cheese, India Tree Tellicherry Pepper, and freshly squeezed lemon juice for this chilled salad with a citrus tang.

Ingredients

  • 1 pound Dried Garbanzo Beans
  • 1/4 cup fresh Basil
  • 1/4 cup fresh Italian Parsley
  • 1/4 cup fresh Lemon Juice
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • 2 Garlic Cloves, minced
  • 2/3 cup freshly grated Parmesan Cheese
  • Pinch freshly ground Tellicherry Pepper

Equipment

  • Measuring cup
  • Measuring spoons

Instructions

  1. Rinse and soak dried beans for at least 8 hours or overnight. Drain and set aside.
  2. Add the beans to a large pot and fill with water (approximately 12 cups).
  3. Bring to a boil. Once boiling, reduce heat and cook beans for 45 minutes.
  4. Rinse thoroughly in a colander under cold water then refrigerate for an additional 30 minutes.
  5. Combine the chilled garbanzo beans, fresh basil, chopped parsley, lemon, olive oil, and garlic in a medium bowl.
  6. Add grated parmesan and toss gently to combine. Season to taste with the sea salt and black pepper.
