How to Use
- Soak (recommended)
- 8-12 hours in cool, salted water; drain and rinse. Helps the blend cook evenly.
- Stovetop
- Simmer in fresh water or stock until tender, ~75-120 minutes.
- Pressure Cooker
- High pressure ~25-35 minutes (unsoaked); natural release 10-15 minutes.
- Seasoning
- Bay, garlic, onion, or a rind of Parmesan early; salt when nearly tender. Finish with olive oil or vinegar.
- After Cooking
- Cool in some cooking liquid; refrigerate 3-4 days or freeze up to 3 months.
