Description
Black sesame keeps its hull, which is where the color and most of the character live. Next to white sesame it's nuttier, more mineral, and carries a light bitterness that works in its favor. Toast briefly in a dry pan and go by smell and sound, since you'll never see them brown.
Ground with sugar for Chinese desserts, or with soy for Japanese goma-ae. Whole, they go over rice, noodles, sushi rolls, roasted vegetables, and bread – and they're very good folded into ice cream.
