Nothing finishes a Thanksgiving dinner like pumpkin pie. Add depth and richness to the filling for this traditional treat with India Tree Dark Muscovado Sugar and Light Muscovado Sugar. Grind your own whole spices, including India Tree Cinnamon Sticks, Nutmeg, and Allspice, for the freshest pie spice ever.
Ingredients
Filling
- 1 can puréed pumpkin
- 1/4 cup packed India Tree Dark Muscovado Sugar
- 1/4 cup packed India Tree Light Muscovado Sugar
- 2 eggs, separated
- 1/4 teaspoon freshly ground India Tree Whole Nutmeg
- 1/4 teaspoon freshly ground India Tree Whole Allspice
- 1/4 teaspoon freshly ground India Tree Cinnamon Stick
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/2 cup evaporated milk
- 1/4 cup Powdered Sugar, for dusting
Crust
- 1 2/3 cups of all-purpose flour
- 8 tbsp butter, diced
- 2 tbsp India Tree Caster Sugar
- 1 egg yolk, beaten
- 3 tbsp ice-cold water

Instructions
- To make the pastry, put the flour in a food processor with the butter and a pinch of salt, or cut it together with a pastry blender. Mix until it resembles breadcrumbs. Pour into a bowl and mix with the Caster Sugar, egg, and water to form a dough. Knead till smooth. Form a ball and wrap it in parchment or plastic wrap. Chill for at least half an hour.
- Roll out the pastry on a lightly floured surface to a 1/8″ thickness. Use to line a 9″ pie dish. Prick the base of the pastry and trim the edges, then chill for at least half an hour, or overnight.
- To make the filling, preheat the oven to 425°F. Whisk the yolk, sugars, and spices until thickened and lighter in color. Mix the pumpkin with the cream and evaporated milk, and fold in the yolk mixture. Beat the egg whites until stiff and fold into the pumpkin mixture. Pour into the pie dish.
- Bake for 15 minutes at 425°F. Reduce oven temperature to 375°F and continue baking for 35 minutes or until the knife inserted in the center comes out clean. Cool pie before cutting.
- Dust with Powdered Sugar and serve. Refrigerate any leftovers.
