Dried Chipotle Chiles

Smoked jalapeño, before it goes in a can.

SKU: N/A Categories: ,

Description

A chipotle is a jalapeño left to ripen red, then smoke-dried over wood. Most people only meet them canned in adobo, sitting in tomato and vinegar – these are the same chile before any of that, so the smoke comes through clean and you decide what goes with it.

They're properly hot, several times the heat of an ancho, so use fewer than you would a mild chile. Toast briefly, soak in hot water, and blend into salsa, adobo, barbecue sauce, or a pot of beans. Or grind them dry into a powder for rubs.
