Description
The sugar lands first and the ginger comes up behind it, warm and clean and lasting longer than you expect. Thai ginger is the spicier of the two kinds usually candied, and tender enough to chew straight from the jar.
Chop it into scones, cookies, and quick breads, fold it through granola, or steep a few pieces in hot water. It's also very good eaten plain alongside something dark and chocolatey.
