Description
Habanero is fiercely hot, and that isn't the interesting part. Underneath the heat it's genuinely fruity – apricot, citrus, something almost floral – which is why it belongs with mango, pineapple, and lime, and why cayenne can't stand in for it. One chile will carry a large pot.
Wear gloves, or wash your hands thoroughly afterward and keep them away from your eyes. Toast lightly if at all, and open a window – the fumes bite. Stem, seed, soak, and blend into salsa, hot sauce, or a Yucatecan marinade with citrus.
