Description
Cayenne is heat without much else attached. Where Aleppo is fruity and paprika is sweet, cayenne is mostly just hot, which is exactly why it's useful – you can raise the heat of a dish without changing its flavor. Start with less than you think, since it keeps building for a few seconds after you taste.
Good in hot sauce, rubs, and chili, stirred into gumbo or jambalaya, or shaken over eggs and roasted vegetables. It's also the quiet backbone of a lot of spice blends, doing the heat while something else gets the credit.
