Description
People argue about whether bay does anything. It does, just quietly – over a long simmer it adds a faint eucalyptus and black-tea note that rounds the edges off a stock or a pot of beans. Leave it out of a braise you've made a hundred times and you'll hear about it from yourself.
Add one or two at the start and take them out before serving; the leaves stay stiff and sharp no matter how long they cook. Good in stocks, braises, tomato sauce, beans, rice, béchamel, and pickling brine.
