Description
Za'atar is a blend and also a plant – the wild herb it's named for grows across the Levant, and the mix builds around it. Here that means oregano and thyme, with sumac for tartness, sesame for body, and dill giving it a green, faintly anise edge.
The classic is a shallow bowl of olive oil with za'atar stirred through and bread to tear into it. Also good scattered over labneh or hummus, rubbed onto chicken, tossed with roasted vegetables, or sprinkled on flatbread before it bakes.
