Description
If Italian sausage tastes like Italian sausage to you, fennel is why. It's sweet and warm with a gentle licorice edge, softer and rounder than star anise, and it turns up in three of our own blends – panch phoron, five spice, and the pho.
Crush or toast the seeds to open them up. Good with roast pork and porchetta, with fish, in tomato sauce, and baked into taralli and biscotti. In India they're also served plain or sugar-coated after a meal, to chew.
