Golden Chanterelle Mushrooms

Golden Chanterelles, also called egg mushrooms, commonly grow in deciduous woods. Apricot yellow in color, they are shaped like curved trumpets. Sautee them in butter with chopped onions or shallots, garlic, and parsley. They are wonderful with eggs and in sauces.
