Ruffled caps that soften to a silky chew with a gentle savory-sweet note. Non-GMO and pantry-ready. Soak briefly, rinse well, then slice and give them high heat so edges frill and brown. They love garlic, ginger, soy, and a splash of rice vinegar.

How to Use
Soak
Cover with warm water 15-20 minutes until supple and expanded.
Rinse & Squeeze
Rinse 2-3 times to remove grit, then squeeze dry. Discard soaking liquid for oyster.
Trim & Slice
Trim any tough bases. Slice into wide ribbons for even cooking and a refined bite.
Stir-Fries
Heat oil until shimmering, add mushrooms and sear undisturbed 1-2 minutes for browned, ruffled edges. Toss with aromatics and sauce.
Noodles & Soups
Add near the end to keep their silky texture - perfect in lo mein, udon, and brothy soups.
Crispy Finish
After searing, drizzle a little oil and finish with soy, rice vinegar, and scallion.
