Description
Cumin turns up almost everywhere – taco seasoning, garam masala, berbere, falafel, Cajun rubs. Six of our own blends have it in them. Toasting is what makes it worth buying whole: a minute in a dry pan takes it from sharp and raw to warm, nutty, and faintly smoky.
Toast the seeds and grind them as you need them, or leave them whole in a tadka, a pot of black beans, or a rice pilaf. Ground cumin fades within months. Whole seeds hold for years.
