Description
White kernels are smaller than yellow and open into more delicate flakes, with thinner hulls that are less likely to end up in your teeth. The corn flavor is milder too, which makes it a cleaner vehicle for butter and salt.
A heavy pot, oil with a high smoke point, and three test kernels: when those pop, the oil is ready. Add the rest in a single layer, cover, and shake steadily until the pops slow to a couple of seconds apart. Grown on one small family farm in the Midwest.
