Savory, smoky mushrooms for ramen, stir-fries, dumplings, and broths.
Woodsy, smoky aroma with round, savory depth. Non-GMO and pantry-ready. Soak cool and slow for maximum perfume, strain and reserve the liquid, then saute with ginger and scallion or butter and shallot. They love soy, mirin, and a splash of rice wine or white wine.

How to Use
- Soak
- Cover with cool water 30-45 minutes or refrigerate overnight until fully supple.
- Rinse & Trim
- Lift mushrooms out, leaving grit behind. Rinse briefly and trim tough stems.
- Strain & Reserve
- Strain soaking liquid through a fine mesh or coffee filter - reserve for ramen broth, sauces, and soups.
- Saute
- Saute in neutral oil or butter with aromatics; deglaze with rice wine or white wine and finish with the reserved liquid or stock.
- Ramen & Broths
- Slice and add to miso or shoyu ramen; use soaking liquid as a quick dashi-style base.
- Stir-Fries & Dumplings
- Stir-fry with vegetables and sauce or mince and fold into dumpling fillings for umami.
- Yield
- 1 oz dried yields about 2-3 cups sliced after soaking.
