This three bean and chicken chili is bursting with savory flavors. Black Beans, Small Red Beans, and Rojo Chiquito Beans combined with spices, chiles and herbs that warms up an evening with an Autumn chill in the air, or wows at a chili cookoff.

Equipment

  • Large pot
  • Spice grinder
  • Measuring cup
  • Measuring spoons

Instructions

  1. Drain beans and set aside
  2. Shred cooled chicken breasts
  3. Add the chicken stock, and balsamic vinegar and bring to a simmer.
  4. Add the beans, and bring back to simmer.
  5. Add spice mixture. Stir, then add the herbs.
  6. Simmer covered for 45 minutes.
  7. Remove Bay Leaf. Add shredded chicken. Turn heat to low and let sit for an additional 15 minutes.
